Braised Smoked Ham
Smoked and Cooked Leg of Ham. This braised smoked ham is a "juicy" and smoky leg, traditionally smoked for 3 days in "tuyé"chimneys commonly found throughout the Franche-Comté region. The leg is cured before being cold smoked over pine, juniper and spruce for 5 to 10 days. It is then steamed overnight. The steaming process helps the ham retain all its moisture for a really juicy texture, smoky without being too salty.
- The pigs used are the regional “Porc de Franche-Comté” breed. This product is a recognised PGI (Protected Geographical Indication)
- One of the best ways to enjoy this amazing ham is to combine it in a sandwich with Comté cheese and mustard
