- Ducks only used from a small number of carefully selected French farms where the animals are raised ethically following age-old traditions
- On the day, let the duck breast come to room temperature. Score the skin with a knife without reaching the flesh, season and cook over medium heat for 10 minutes on the skin side then 5 minutes on the flesh side. Wrap in aluminum foil, let rest for 5 minutes and slice at the last minute. It will be cooked to perfection and will retain all its juices and softness
