Large, firm, claire-finished Oysters from France’s famed fourth-generation oyster dynasty, which calls itself “the Rolls-Royce of Oysters”
- Often considered the best oysters in the world. Gillardeau oysters are cultivated for four years, following strict rules that have been passed down for four generations. Nine months after birth and a period in containers in oyster parks, they are placed in bags and submerged for more than three years in deep water, rich in phyto-plankton that forms the essential basis of their food intake. Their density is kept deliberately low so that each one is sufficiently well nourished and has the space required for its growth
- They have a really sweet taste with notes of dried fruit. They have a firm and thick meat and a slight crunch
- Oysters N.4 weigh between 46 and 65g; finely iodized, crunchy and soft, they are perfect for a starter or an aperitif

1978: During his time at the head of Maison Gillardeau, Gérard Gillardeau gave birth to the iconic Gillardeau oyster. Oysters lovers quickly associated La Gillardeau to excellence for its recognizable quality and appearance, as well as the generosity of its flesh
2014: In its fight against counterfeit, Maison Gillardeau decided to equip its packing chain with a laser allowing to brand each oyster with its logo to certify their authenticity
2019: On september 2019, Mrs. Véronique Gillardeau became the new CEO of Maison Blanc, a highly renowned establishment from the Rungis Market and a longtime client of Maison Gillardeau

Selection Process
From their shell shape to their flesh rate, La Maison Gillardeau daily checks every oyster from their parks to certify that they met their requirements, and therefore those of their clients.
Since salinity level as well as the oxygen rate can affect the well-being of oysters, to ensure the optimal conditions for their oysters’ growth, they regularly verify the waters of their development pools.
Many times a day, they examine the waters quality by conducting several analyzes.
Once all those requirements passed, and after a vigorous cleaning aiming to get rid of parasitic shells, each oyster bag is then sorted manually during their packing process
