  • The Oyster “Plate du Bélon” is a 3-years old Oyster originated from deep-sea water in the Atlantic North East. Then, this typical oyster is refined first in Carantec foreshore and then in the Bélon River for 2 months, during which it acquires its particular taste of “Bélon River”, famous all around the world and coveted by the greatest Chefs
  • To fully appreciate their taste qualities, Oysters must be the subject of special attention. They can be conserved more than a week before tasting them, in their basket, lower valve down, at a temperature of 6° to 9°, in the bottom of the fridge. They should only be opened shortly before tasting. We can throw “the first water and then the oyster will naturally produce “a second water”
  • Consuming them plain is the best; we can also like them with a little twist of the pepper mill or a dash of lemon; shallot wine vinegar is not the best choice because it kills the salty flavours. A slice of rye bread, a good Breton salted butter and a glass of dry white wine, to celebrate the perfect marriage of flavours…

Selection Process
From their shell shape to their flesh rate, La Maison Gillardeau daily checks every oyster from their parks to certify that they met their requirements, and therefore those of their clients.
Since salinity level as well as the oxygen rate can affect the well-being of oysters, to ensure the optimal conditions for their oysters’ growth, they regularly verify the waters of their development pools.
Many times a day, they examine the waters quality by conducting several analyzes.
Once all those requirements passed, and after a vigorous cleaning aiming to get rid of parasitic shells, each oyster bag is then sorted manually during their packing process
