The Spéciale de Claire is a rare Oyster, with a firm texture, a sweet taste, and a good mouthfeel. It represents only 20% of the Marennes Oléron Oysters. This is the oyster of choice for the connoisseur who appreciates plump oysters with balanced flavours

• When tasted, the Spéciale de Claire IGP is distinguished from the Fine de Claire by the firmer texture of its flesh, its fullness in the mouth, and a remarkable balance between sweetness and saltiness. For several weeks, it will finish in the claires, these shallow clay ponds, which allow it to acquire a shell quality superior to that of a special open-sea oyster. It is also during the finishing process in the claires of the Marennes Oléron basin that the oyster adds to its marine flavour the subtle taste of the terroir, which lingers on the palate
