Mimolette Vieille is a French cheese, matured in the Hauts de France. It is made from pasteurised cow's milk, with an uncooked pressed paste, and an average weight of 3 kilos
- The best time to eat Mimolette is from April to September after maturing for 12 to 18 months; but can also be eaten all year round!
- Old Mimolette has a hard and brittle texture, its orange colour is due to the addition of Annatto in the milk (a seed rich in carotene), a natural colouring.
- Old Mimolette gives aromas of toast, caramel and coffee in the mouth, slightly sweet on the finish
- Size: 1.5kg, 3kg (whole)
