Maroilles is a cheese made from pasteurised cow's milk. Its dough is soft with an orange-red washed rind. It can be recognised by its square shape but also by its characteristic strong odour and its full-bodied flavour

To truly appreciate this cheese, it is good to eat it fully matured, which provides a smooth, fatty, supple paste when tasting. It can also be cooked in various preparations such as the famous Maroilles flamiche, with soups, gratins and meats
