Sainte Maure de Touraine AOC cheese is an unpasteurized cheese made from full-fat goat's’ milk, produced in the province of Touraine in the department of Indre-et-Loire, Central. It is one of the classic cheeses of France and has been AOC-protected since 1990
- The cheese is formed into a small log and rolled in Ash, measuring 16–17 cm in length and weighs at least 250gm. It has a straw through its centre, marked by the AOC seal and a number indicating the producer. The straw is used during production to keep the roll together
- The cheese is soft and white, aged for at least 2 weeks, where it develops a natural grey flora on the surface of the rind which helps with ageing as the cheese ripens. It has a slightly salty taste and depending on the maturation period, the flavour can be nutty, with a walnut aroma
