Fresh Alba White Truffle
The White Truffle, also known as the "Alba White Truffle," is primarily harvested in northern Italy, though it has begun to appear in other countries, such as France. It is the rarest and most precious of all truffles, which explains why its price is significantly higher than that of other species
- The Alba White Truffle is now the only truly wild fresh truffle and cannot be farmed. Its colour varies from pale yellow to ochre, while inside it is furrowed by white veins, its flesh ranging from cream to white, sometimes featuring pink speckles depending on its maturity and its symbiont tree. It is a very fragile truffle that does not lend itself to cooking, so eat it raw, grated over a risotto or in thin slivers
- Its aroma and taste are strong and intense, reminiscent of fresh garlic, shallots, or even cheese
- The Alba White Truffle is best enjoyed raw, shaved directly over pasta, risotto, eggs, or polenta. Be careful never to cook or heat it, as this would destroy its aromas
- Our truffles are washed, carefully sorted, and selected, then packaged in bags designed to ensure they remain in good condition. Upon receipt, wash the truffles and pat them dry. Place them in an airtight container lined with paper towels - which should be replaced every two days - and store them in the refrigerator (between 2°C and 5°C). Best consumed within 7 days. The truffles may also be frozen
- Available from October to December
- Size: 50g, 100g, 500g
